Cinnamon cassia co-op
Cinnamon cassia has been proven to decrease insulin levels and actually improve metabolism particularly when eating carbs, helping your body to turn them into muscle as opposed to fat cells. Sounds like an ideal way to boost metabolism by eating more cinnamon (cinnamon roll anyone haha). It is an ingredient that is widely used in so many sweet and savoury things and with these great health benefits i thought it might be interesting to make sure the cinnamon we sell is infact cinnamon cassia (both in stick and powdered form). I found this great 'Cassia co-op' from indonesia that produces the cinnamon and also acts as a training centre. If people are interested in discussing this at a food cafe or next meeting i could email the suppliers to discuss a few things!

Sounds good, personally I think we're going to struggle if we get loads of direct individual suppliers but if we can manage it then great! :)

As emailed it would be great to get some suggestions on what words to include in the green action tree mural design that has been emailed around. I propose about 6 words that describe the values of the food co-op within green action. Words like 'ethical, organic, health...' can all be used to attract future members to engaging with the shop. Put down your suggestions here and then we can hopefully get painting very soon :)

gotta get those photes from the meeting somewhere where we can all see them! we created such an epic tree. I'll find the words we wrote down and add them to this discussion tomorrow

great researching! probably many of the spices we use without thinking have some serious sustainability and supply chain implications. This one has a really interesting story, and I like the idea of cutting the supply chain. I'm up for a food cafe on spices sometime (alongside all the other ones we've got in the pipeline!)
