Is it posible to setup a LAMP stack alongside my installed instance of Loomio?

I've got my instance of Loomio setup on a Debian DigitalOcean "Droplet". I was hoping to setup a Wordpress site alongside this. When I try to access the webroot of the server via a browser I get the 503 error from Nginx and nothing from the Apache server.

Any help with this would be super!

Yep. The default loomio-deploy uses nginx as the frontend HTTP server. It is setup to support automatically configured virtual hosts.

This means that if you put your wordpress site into a docker container, expose any port, and add it to docker-compose.yml with VIRTUAL_HOST, LETSENCRYPT_HOST, LETSENCRYPT_EMAIL environment variables, then it'll just work.
