Off the top of my head, these are just some of the current and potential uses of GIS pertinent to NZ:
Transit/Transport - volumes, easing, route selection, EIA
Vegetation encroachment - on power network, rivers, coasts
Condition assessment - power poles, rail, road, pavement, infrastructure
Pest mapping - Didymo, Possums, introduced species
Forecasting/Modelling - weather, tectonic plate movements
Emergency Management - Quake, Fire, Flood (Tsunami)
Humanitarian response (NZ and Pacific) - disaster relief, aid
Tourism - hotspots, negative impact
Forestation - Deforestation
Recreation mapping - reserves, facilities, no-go zones, trails (hiking and biking)
Crime - mapping, hot spots, police resource allocation
Real Estate - socio-economics, demographics, proximity mapping
Maritime - AIS feeds, shipping movements
Aerial surveys - UAVs, Satellite, Aerial, LiDAR, SAR
Business - site location, performance
Environmental/ecological mapping - erosion, endangered species
Defence - protecting our (and our pacific neighbours) borders

This is great stuff, what is the best way to migrate this into a resource ready format, like to draw out examples for each, or refine the list into something that helps describe the benefits or is this best incorporated as an opportunities chapter or section. Stats have developed some useful categories to carve up industry as well that I've thought about using as the basis for a "GIS can be applied to all these things" type inspirational pictogram, like the one Nathan recently did for one of his blogs.

I suppose it depends on the size of the target audience and the overall purpose of the list.
For this group, we could put up a website (i'm new to loomio, so don't know how far we can stretch it) with categorised links, references, contacts and examples.
For public consumption, perhaps a link on the LINZ/NZSDI site to a layman's version of the same information.
I am currently using Atlassian's Confluence for our internal knowledge base - so perhaps something similar would work?
As we all know, GIS can be applied to almost everything, so we may need to do some broad groupings (with more granular examples). Infographics are very useful for putting the overall message out there.
