How do I change the domain of my Loomio instance?

How do I go about changing the domain on my Loomio instance? It's currently set as a sub domain of one of my sites loomio.8k.str.nz and I'd like it to be under my new domain I bought: loomio.8k.nz.
I tried changing out the details in the env file last night, put docker up then down as per the instructions on the github deploy repo but the Let's Encrypt SSL cert didn't switch to the new domain. Is there anyway to manually renew this?
And do I just create a CNAME for the old URL to redirect to the new one?

Thanks @robertguthrie. I forgot to update the faye_env file, this defines one of the domains associated with the HTTPS Lets Encrypt service.

If you look at:
https://github.com/loomio/loomio-deploy/blob/master/scripts/default_env in the loomio-deploy reply you'll see a bunch of vars assigned to REPLACE_WITH_HOSTNAME. You need to edit your .env and change all instances of old hostname to new.
